OSU Extension Service offers food preservation classes

As gardens across the Mid-Valley start bearing fruits and vegetables, Oregon State University Extension Service is offering food preservation classes to teach the public how to preserve the bounty of summer to enjoy year-round.

The classes provide information on how to preserve food, safety guidelines to follow and include a hands-on opportunity to preserve food during class.

Aug. 10: Preserving fruit, Gehlar Wellness Kitchen at Salem hospital, 6 to 8:30 p.m.

Sept. 9: Basics of pressure canning, Gehlar Wellness Kitchen at Salem hospital, 9 to 11:30 a.m.

Sept. 9: Basics of pressure canning, Gehlar Wellness Kitchen at Salem hospital, 6 to 8:30 p.m.

Classes are $12. Registration is required by calling (503) 588-5301 or emailing tonya.johnson@oregonstate.edu.

The OSU Extension Master Food Preservers also will be at the Salem Saturday Market to answer questions and test pressure-cooker gauges on Aug. 8 and Aug. 29.
